What is the Kyoku best for?

Large-format food preparation, dense produce, whole and large meat cuts, poultry/fish breakdown and controlled heavy chopping. It is Nikuya’s heavyweight cleaver option.

Can the Kyoku cut bones?

Yes, within a narrow approved light-bone scope. Suitable small/light poultry and fish bones are intended; thick drumstick, dense pork/beef and other large/load-bearing bones are not.

What counts as a light bone?

A small, relatively thin poultry or fish bone ordinarily encountered in normal kitchen breakdown and portioning that can be cut with a controlled chopping stroke without excessive force. Smaller wing/carcass bones and suitable light fish-bone sections may qualify.

Can I use the Kyoku outdoors?

Yes for outdoor FOOD PREPARATION. It is not intended for chopping wood, branches, cans or other non-food utility/axe work.

Can I cut frozen food or hard shells?

No. Avoid frozen meat/food/bones, coconut shell and very hard shells/materials.

How should I care for the Kyoku?

Hand wash, dry promptly and thoroughly, avoid prolonged soaking/dishwasher use, store dry with the edge protected and avoid twisting/prying. Kyoku uses the owner-locked High Carbon Steel Knife standard at 56–58 HRC with a Koa wood handle. Do not add a different material/handle label or special oiling/patina requirements unless separately owner-approved.

What cutting board should I use?

Wood or suitable food-grade plastic. Avoid glass, stone, granite/marble, ceramic and metal cutting surfaces.

What if the edge chips or the knife develops a problem?

Nikuya’s 1-Year Craft Warranty applies to qualifying material/workmanship defects under intended use. Approved light-bone use does not automatically void a claim; circumstances are reviewed.

Can I return it if I change my mind?

Eligible unused products may be returned within 30 days subject to the locked Returns & Warranty Policy conditions.
